Creamy mushroom soup: Warm your body and soothe your soul

 Soup is a simple dish that can warm both your body and heart ^^. I love to have it as a light meal.



When I was a child, my aunty made soup very often (she's very good at cooking). We had many kinds of them, as she made both Chinese and western style. I love the one with milk or cream in them (well, they were rich in taste and texture ^^). At that age, I think that making soup is not easy.
But the fact is, it's not hard to make. Like this one, you can make it in less than 30 minutes. This Creamy mushroom soup is rich in taste and texture, by using the flour it give the soup more mouthful texture without using a lot of cream. You can use different kinds of mushroom, as long as you like it, haha, (shimeji or eryngii are good choices). 
Serve warm with slices of bread as a light meal for dinner time can both warm your body and soothe your soul too. 



Creamy mushroom soup
Serve 2


100g ..................... Mushroom, finely sliced
1/2 ........................ Onion, finely sliced
1 tbsp .................... Butter
1 1/2 tbsp .............. Plain flour
300ml .................... Milk
100ml .................... Whipping cream
1 tbsp .................... Parmesan cheese
............................... Half of 1 Chicken bouillon
............................... Salt and pepper, to taste
............................... Bread, to serve 



Place a saucepan (I use Le Creuset : 14cm)over low heat, add the butter, let it melt.
Put the onion slices into the saucepan, stir until soften.
Add the mushroom slices, stir until soften.
Pour in the flour, stir until mixed.
Pour in the milk  stir until combine.
Put the Chicken bouillon and Parmesan cheese into the saucepan,  stir until combine.
Let the mixture become boil, then pour the whipping cream into the saucepan, stir until combine.
Let the mixture become boil again, and season with salt and pepper
Serve warm with slices of bread.
